The Ognicost is a dry white blend, mostly made with Verduzzo Friulano grapes that are harvested from historical plants present in the farm vineyards.
The OgniCost name comes from a sentence that Angelo Gaja
said to Marco: "If you really want it, it must be yours at any cost". Then turned into the typical Friulan expression OGNICOST in honor of Marco’s native land, Friuli.
The vines grow in a soil called "flysch", which is composed of marl and sandstone originating from marine sedimentary deposits. The vines are trained to 'doppia cappuccina', reflecting the ancient trellising adopted in the DOC Friuli Colli Orientali. This peculiar
training system allows for an optimal distribution of the bunches on the plant, leading to a better quality of the grapes, thus positively affecting the result of the finished product.
Organic farming is practised in the vineyard, respecting the biodiversity that contributes to the uniqueness of the Ognicost.
The harvest is rigorously carried out by hand, the grapes are immediately transported to the cellar, where they are destemmed, crushed and pressed. The must obtained is placed in stainless steel tanks, where it is cooled and kept at a constant temperature for four days. At about half-fermentation, one third of the mass is transferred into small oak barrels, where the fermentation completes and it remains there for maturation.
The remaining mass is kept in the stainless steel tanks until the two masses are mixed for bottling. The Ognicost expresses the varietal typicality in all its nuances. The nose has notes of lime blossom and honey, while on the palate it has a good acidity and a soft tannin.
