The Sorelle is made with Friulano grapes, obtained from a small vineyard situated on a hillside of Savorgnano del Torre. This vineyard is under three sisters' ownership, hence the name of the wine, as a tribute to the landladies.
The vines grow in a soil called "flysch", which is composed of marl and sandstone originating from marine sedimentary deposits.
The vines are trained to 'doppia cappuccina', reflecting the ancient trellising adopted in the DOC Friuli Colli Orientali. This peculiar training system allows for an optimal distribution of the bunches on the plant, leading to a better quality of the grapes, thus positively affecting the result of the finished product.
Organic farming is practised in the vineyard, respecting the biodiversity that contributes to uniqueness of the Sorelle.
The harvest is rigorously carried out by hand, the grapes are immediately transported to the cellar, where they are destemmed, crushed and pressed. The must obtained is placed in stainless steel tanks, where it is cooled and kept at a constant temperature for four days. Subsequently, the must starts the fermentation in stainless steel tanks and, at about mid-process, it is transferred into small oak barrels, where the fermentation ends and the wine remains for the whole period of maturation.
The Sorelle embodies the typical nature of the variety in all its nuances. The nose has
floral and citrus notes, while the palate feels a good texture with a slight note of almond.
